Morning Glory Muffin Recipe

morning_glory_muffinsYum.  I am trying to be so healthy, and I made this last night, and have frozen some as well.  It’s a yummy healthy recipe that makes me feel GOOD about eating a muffin in the morning.  Carbs, schmarbs….

I took this and adapted it from

1 c. white flour
1 c. whole wheat flower
1 c. oats
1 c. wheat bran
4 tsp. baking soda
4 tsp. cinnamon
2 tsp. grated nutmeg
1 tsp. salt
1 1/4 c. sugar
1 1/4 c. applesauce
1 c. chopped pecans
2 c. grated carrots
2 c. grated zucchini
1 c. chopped raisins
1 apple, cubed in little squares
1 c. oil
1 c. melted butter
4 tsp. vanilla
6 lg. eggs
  • Sift together: flour, sugar, salt, soda, and cinnamon
  • Stir in oats and wheat bran
  • Then stir in carrots, raisins, pecans, and apples.
  • Add applesauce and mix.  Mixture could still be flour-y.
  • In separate bowl beat eggs, oil, butter and vanilla.
  • Stir in 3/4 of the butter/oil mixture  into flour mixture.  (you may have extra of this butter mixture, I usually dip a spatula in the egg/oil mixture and mix the flour mixture together until shiny and good consistency.  It should be the consistency of thick pancake batter.)
  • Bake at 350 degrees for 30 – 35 minutes.
  • Makes 18-24 muffins
